The EASIEST chocolate chip pumpkin muffins you will ever bake!
I posted the above photo to my instagram, and twitter last night and I got a ton of love/recipe requests. Honestly I thought everyone knew about this recipe. I used to make them ALL the time in college (in fact I think I have blogged about them before) and they are all over Pinterest as a Weight Watchers approved treat.
So, if you don’t know about them, let me tell you how easy, and great they are.
Technically you only need 2 ingredients. (This is the skinny version) 
A box of Spice Cake Mix
A can of Libby’s pure pumpkin (not pie filling)
You mix the two together, spoon into muffin trays, and bake at 350 for 20 ish mins. (I made up those numbers, do what works for you)
NOW…because I am a fatty I had to spruce them up a bit.
You are going to want to dump about a cup of chocolate chips into the batter before baking.
Then you are going to want to make your own cream cheese frosting. (Again I don’t have definite numbers, I just mixed until it was right.)
Cream Cheese
Butter
Confectioners Sugar
Vanilla Extract
Mix together, and plop on your muffins. 
Eat 1-3 every morning with your Pumpkin Spice Latte, and be completely satisfied until lunch! Trust. Me.
Also, those cupcake wrappers are from my Tumblr Buddy last fall! Love.
